There is a theory that Looter Professions represent a +0% to +7% increase in loot size from level 0 to level 100 (+0.07% per level) when looting the creature type associated with a given looter profession.

(BUT there is no official statement about the number yet)

But the only official word on the Looter professions so far was this: "I have confirmed with the dev team that the loot profession only affects loot returns (as stated in the release notes), not loot composition." -- Ludvig|MindArk
